Eggs in Pepper Rings

The best part of me sharing this with you, is that it looks much more impressive than the effort it actually takes. The gem here are the eggs, not over cook and remind to use a non stick cookware.



6 large eggs

1 green belt pepper ​

1 red belt pepper

2 slices of purple/ red onion​

Salt and pepper to taste​

Cut the bell pepper from top to bottom in slices that resemble rings. 

Prepare a pan with a light layer of oil or nonstick cooking spray. First caramelize red-onion slices for 5 minutes, sprinkle onions with salt and pepper, they are sweet, so you can sprinkle with sugar (optional). Serve a small portion on each plate.

Then, place 6 of the bell pepper rings on the pan over medium heat.  Cook 3 green and 3 red bell pepper rings, that way you serve colors in your plate. Crack an egg in each ring and allow it to spread out to fill the bell pepper ring. if the egg slips under the ring, just clean it and keep pressed with your blade spatula until cooked.

Season the eggs with salt and pepper, to taste. If you like your eggs soft, cook over low heat for 3-5 minutes, or until the eggs are cooked to preference. If you like your eggs hard, break up the yolk with the pan for even cooking. Cook 6-9 minutes, or until the eggs are cooked to preference.

Serve 2 bell pepper egg rings per person and
